Nothing quite sounds like summer like the bright flavor of lemon! I love baking lemon loaves and muffins in the summer, and figured why not make it into a smoothie! While the lemon and blueberries are the stars of the show, the oats and almond extract are what really give it that cozy muffin taste. Check out the recipe and let me know what you think!
The best thing about smoothies, aside from being nutritious and delicious, is that they are an easy way to use up fruit just before it goes bad! I always freeze my brown bananas, as well as whatever berries or pieces of fruit are still lingering in the back of the fridge at the end of the week. Combat food waste and get a refreshing smoothy out of it? It's a win-win!
A key to making smoothies is making sure you include, protein, fat and fiber. This ensures it will be filling and nutritious. Of course the fruit will always help you get some fiber in there, and in this recipe, the oats are a good source of fiber as well. Both the milk and the almond butter provide protein in this recipe, alongside fat from the almond butter. If you want this to be a post-workout smoothie, or you prefer non-dairy milk, you could always add protein powder to ensure adequate protein! I would recommend vanilla for this smoothie.
Ingredients
1 frozen banana
1/2 cup frozen blueberries
juice of 1/2 a lemon
1/3 cup oats
2 tbsp almond butter
1 cup milk
1/4 tsp almond extract
