PB&J Energy Bites



Is there anything more comforting than a simple PB&J? This recipe turns a classic sandwich into a fueling snack! With fiber, protein, carbs and unsaturated fat, these energy bites have everything you need for a nutritious and filling snack. They're great for on the go fuel, adding protein to breakfast, or a post-workout snack! And the best part is, they're quick and easy to make!


Ingredients:

  • 5 dates

  • 1 cup freeze dried strawberries

  • 1/2 cup natural salted peanut butter

  • 1/3 cup rolled oats

  • 1/2 cup almond flour

  • splash of vanilla extract



Recipe:

  1. Place the dates in a bowl and cover them with enough hot water so that they are fully submerged. Allow them to sit 5-10 minutes.

  2. In a blender or food processor, combine the freeze dried strawberries, peanut butter, oats, almond flour and vanilla. Add the dates and roughly 1/3 cup of the left over warm water. Set the rest of the water aside.

  3. Blend until combined to desired consistency; the mixture should stick together and be thick enough to shape into balls. If the mixture is too dry/crumbly, slowly add more of the warm date water. If the mixture is too thin to hold its shape, add almond flour until you reach the desired consistency.

  4. Shape the dough into golfball sized balls and enjoy!

  5. To store, refrigerate in an air tight container up to 1 week
